Schilo van Coevorden received his formal training at The Culinary School of Rotterdam and then his apprenticeship in the classic Rotterdam restaurant La Villette. He has worked for Roger Souverijns in the famous two-star Michelin restaurant Scholteshof.Schilo in Belguim and also Rotterdam where he worked in Parkheuvel, a two- star Michelin restaurant. Later he worked under the famed French chef Jean Claud Bocuiel in ‘Im Schiffchen’ the three-star Michelin restaurant in Dusseldorf.

In London Schilo worked as Head Chef in the Lowndes Hotel, a boutique hotel in Knightsbridge operated by Hyatt International. The company later sent Schilo to Dubai (United Arab Emirates) to open their modernist, Foccaccia, a 120 seat Mediterranean restaurant inside the Hyatt Regency Dubai.

In 1996 Schilo opened the Sphinx Restaurant, a global food concept in H.E Sheikh Mana bin Khalifa Al Maktoum’s Pyramids Complex.
